Can this thread be made a sticky?

Our Christmas roast is adapted from a recipe in the Gaia's kitchen book. I'll post the original recipe (not vegan) with alternatives in brackets.

CHEESE CASHEW AND WALNUT ROAST (Serves 6 unless you like extra large portions Embarassed )

6oz onion, finely diced
6 oz chopped mushrooms
2 cloves garlic, minced
1 medium red pepper, finely diced
2 to 3 sticks, celery finely diced (we'll omit these as noone likes celery)
1 tsp each dried thyme,sage, marjoram (or your prefered herbs)
9 ozs cooked brown rice
4 ozs walnuts, chopped fine
4 ozs cashew pieces
5 medium eggs (these will be left out, rice flour and water substitute)
6 ozs cottage cheese
12 ozs any cheese (smoked, red leicester, cheddar, whatever you like)
Instead of cheese we will use some vacuum packed organic chesnuts
4 tblsp chopped fresh herbs
1 tblsp dijon mustard
salt and pepper to taste
olive oil for sauteeing

Saute onion in oil till translucent
Add mushrooms, garlic, red pepper, dried herbs, salt and pepper. Cook till mixture is soft, stir regularly to avoid burning.
Combine all ingredients in a big bowl and mix well.
Line a 2lb loaf tin with baking parchment, making it taller than tin so the top can be covered. Fill the tin to 3" at most as the outside might get leathery before inside is cooked.
Bake at 180 C (350 F, Gas mark4) for about 1 1/2 hrs. Allow to stand for 10mns before turning out. This can be served cold and eaten on sandwiches.

Another dairy free version is to add 9 ozs of crumbled tofu instead of cheese and eggs.

I used to make 'sausage rolls' with sage and onions, breadcrumbs, tomato puree and nuts, as the sausage bit in the roll. Binding the mixture with eggs is good, if the veggies will eat eggs.
Non veggies loved them too!

And Lottie - that sounds lovely too. I have really missed sausage rolls since being pregnant (my only non-veggie craving - although I did give in!) Might have to make some at the weekend. Or possibly sooner.

sausage rolls .... i make my own ,.with proper sausage meat from the butcher just ask for it loose. i then roll it out and put sweet pickle .branston pickle . my own pear relish , own mint / apple relish , and small bits of silverskin pickled onions . cranberries. oh and if you want to really make em bite back . put a coupel of shredded chillie in them .roll flat then put the chillie strips in then roll together...i promise ya they will set you on
