Wonderful stuff and I've been experimenting!
Grated veg, carrot works well, 1 tsp garam masala, salt to taste. Mix with a little gram flour and water, just enough to stick the carrots together. Deep fry in dollops!
Spinach with a little grated cheese and seasoning as above, again with gram flour and water, deep fried in dollops.
Courgettes grated, sprinkled with a little salt then left for 15 mns. Squeeze out as much water as possible (this can be used for a curry sauce) then season, mix and cook as above.
All these are nice cold so would work for picnics/packed lunches and I'm sure there are other combinations of veg that will work.
will try the courgette ones this weekend I think, we are always looking for new courgette ideas, so far we've made, courgette cake, courgette and choccie muffins, and courgette and feta fritters
