Anyone got a recipe for vegetarian 'sausages'I'd like to have a go at making some veggie sausages from scratch, as opposed to using Quorn/Cauldron etc. ready made ones.
Does anyone have any recipes for something that can be shaped and cooked like a sausage...? Preferably without nuts - much as I love them, they're not exactly slimming!

Sure I've got something somewhere, are oats and oatmeal ok for you?
By the way, there's a good bit of controversy concerning Quorn, it makes Coco and Greenlady ill so I know personally that it's not all heresay. If you already know this then just tell me to shut up! There's a bit about it here

i was looking for one myself!
I recently made some vegie sausage rolls - the sausage bit was something like: finely chopped onion, soy mince, herbs, a bit of marmite, breadcrumbs, egg to bind (well actually i used egg replacer as we'd run out). it was rather tasty! you could probably make it with flour, cooked rice or even mashed veg instead of the breadcrumbs. It was one of my thrown together things!

I'm interested in this too, I really don't like shop bought sausages unless they are very expensive ones from a proper butcher.
But there are times when sausage beans and chips just have to be had

Oats are fine for me Kathy - the only thing I really, really can't be doing with is peppers - red, green or yellow, they're all food of the devil. Apparently, all vegetarians love peppers though...I've got to the point where if we go out for a meal, I ring the restaurant first and tell them I'm allergic to the wretched things
I've heard about quorn making people ill, often it seems to be fine to start with and then it's not. It's almost as if it's a build up of it in the body that causes a problem. However, I detest quorn sausages and the mince isn't much better. The only quorn I really use is the frozen chunks, and that's once in a blue moon. Actually, thinking about it, I normally have that when OH is having something meaty, so I could use tofu (which he hates) instead....
Aqui, those sausage rolls sound goooood. I have some dried soya mince (something else OH isn't keen on) so I could have a go with that and some other bits and bobs.

Just trying to locate the book I'm sure I saw a recipe in. Greenlady keeps taking them to her work so I'll pop in there when I go to the bank this morning!

Oh yes, I forgot about those, used to make them all the time before E came along. I'm sure I could adapt them for her though, thanks for the reminder Bovey!
Still looking for that bloomin book, it's quite annoying as there's other stuff in there I need as well. I'm going down to the cafe tomorrow, late, when it's quiet to have a good look myself!

here is a recipe you could use and adapt
These are great
herby sausages
1 small onion
3oz of slightly stale bread
mix herbs
1 1/2 oz butter or marg
1 egg
oil for shallow fry
salt and pepper
Chop onions roughly
put in food blender with remaining ingredients except oil and whizz to combine
divide in to 8 pieces and form into sausage shapes
fry in oil for roughly 10mins until crisp and brown
(alternative add butter beans (mashed),mushrooms,or parmesan )
vegan recipe replace eggs with 3/4 tablespoon tahini(sesame paste)

BB, we have glamorgan sausages sometimes (OH's speciality!), and I love them, but I'm trying not to eat so much cheese at the moment
Eco, that looks like a good one which I'll have to try. I have some stale bread sitting in the kitchen waiting to be turned into breadcrumbs, so today is as good as any! I think I'll try baking them instead of frying and see what happens....

I like mine with ripped up pieces of bread as i don't have a blender Not sure how it would be with one
