Apricot Chutney (no sugar)

Again this is an experiment. I've tasted the result and I think it will make a nice sweet chutney, difficult to tell until it's sat for a wee while though.

Apricot Chutney (no sugar)

1kg apricots, stoned and chopped
500 grms sultanas or raisins
100 grms cranberries
300 dates (cut into small pieces)
Piece of grated ginger
4 cloves garlic
600 ml vinegar (I use cider vinegar)

Place all ingredients in a pan, bring to the boil and simmer for about an hour, until thickened. Spoon into hot jars and seal.

Not a big apricot fan, but sounds interesting!

This was delicious, none left now!

drat i had some apricots the other week. Don't really like them raw (too sharp usually).

and i've got some cranberries in the freezer.

do you think it'd work with plums?

How long did you leave it to mature?

This was ready quicker because of the apricots, about 6 weeks I think.
