Beans and pulses

I've got out of the habit of cooking much with these but after a weekend with Lloyd's cousin, we both feel inspired to incorporate them much more regularly into our diet.  

So have bought a variety of dried  - borlottie, butter beans, pearl barley etc etc.

Now I just need some quick and easy recipes please  Rolling Eyes  Very Happy  Laughing

I've got the Rose Elliot bean book so I'll look out some recipes. I tend to just cook them with some lovage or seaweed (stops the wind) and either make stews, oven bakes or bean burgers. Oh yes, remember to pop them into soak the night before!

I just throw them in anything. cook as per packet and then throw big beans in pasta sauce or curry with lots of veg. I use lentils instead of mince in bolognase, shepherds pie, etc

I also could do with using more beans - I do use a lot of chickpeas (tinnued usually) and probably once a fortnight or so we'll have something based on another bean of some description.  I keep meaning to get some dried pulses and cook them up in bulk in the pressure cooker for freezing ...  on of these days I'll get organised!!

But yes, any nice recipes would be good.  I too have Rose Elliot's bean book but I find an awful lot of her recipes are very bland...

I have never used dried beans but would like to as I should imagine they are quite a bit cheaper, are they easy to use!!!

They are cheaper and the trick is to remember to soak them overnight before cooking, then they're pretty easy.

Remember that, after soaking, red kidney beans MUST be cooked in fast boiling water for AT LEAST 10 minutes to remove the toxins (I can't remember what the toxins are, but they're not good.)  There's another bean that needs the same treatment but I can't remember what it is - anyone know?

Also, if cooking them in the pressure cooker, don't overfill it as they do tend to produce quite a lot of 'foam'...

Being veggies, beans are our main source of protein so we use a lot, all kinds. I'll try and get some recipes posted over the next few days, non bland ones! Remind me if I forget.................

Oh good, lots of interest here!  I also want to use tofu instead of meat a lot more (don't tell Lloyd)  Wink

Oh dear CP, I can see trouble brewing here! I make my own tofu as well, great fun squeezing the liquid through the muslin, a bit like milking a cow!

Don't forget the lovage leaves, they're supposed to stop pulses being quite so 'draughty'! Embarassed

we use a lot of tofu too. i like the smoked one best (hmm, don't you know someone that does that! LOL!) just use like cubes chicken I suppose. The smoked one is nice sliced in a salad sandwich too. It's lovely roasted with vegetables too.
