Beetroot Chutney

Just finished making a few jars of beetroot chutney, ingredients were

2lb raw beetroot,shredded
1lb onions skinned and chopped
1&1/2lb apples peeled and chopped
1lb seedless raisins
1&3/4pt malt vinegar
2lb sugar2 level tbsps of ground ginger
placed all the ingredients in a pan and brought them to a boil ,then simmerd on a moderate heat untill soft and pulpy, potted .
used our own beetroot,onions and apples, the chutney taste lovly and sweet with a hint of the ginger.

Hmm, sounds nice...

I'm going to print out a bunch of chutney and home-brew recipes, and present them to my OH when our kitchen is finished. He'll have no excuses left by then!

Delish - my beetroot failed - rabbits and drought - could I use already cooked shop bought beetroot do you know?

lottie I wouldnt try already cooked beetroot but why not go to the veg shop/market and you should be able to pick up a couple of pounds of uncooked beetroot. Smile

I live quite a distance from those - making it not cost effective - but I will keep my eye open for any in these here parts!

Svea, we used malt vinegar but you could always used your own made spice vinegar and see what happens, Smile

I am a beetroot fan so this goes on my list of things to try.
Thanks for the recipe, I'll look out for beetroot this week.
