Blackcurrants?What do you all make with blackcurrants? We have absolutely loads of them. Last year I made jam which no one really liked. Yesterday I made blackcurrant sorbet and everyone says it's too sharp. I'm hopeless at wine making. So any ideas? It seems a waste to let them drop on the ground and rot.

and, why didnt they like the jam? too many pips? then make jelly.
too sharp? mix with other berries and make a 'hedgerow' jam instead - raspberries, gooseberries, anything else you might want to put in them?

I think it was more the consistency, it set quite firmly. But that's a good idea about the hedgerow jam, think I'll do that. Thanks Svea

true enough, currants have a lot of pectin which you can of course use to your advantage

How about blackcurrant cordial? I don't have a recipe though.... Alternatively, blackcurrant gin/vodka (like sloe gin)? I've just bottled some cranberry vodka that I made last year and it's delicious (1 bottle of vodka, 1lb cranberries and 3 ounces of sugar). I now have some blueberry vodka on the go and we're off to the pick-your-own place at the weekend for strawberries, some of which may well go the same way

oooh yes, blackcurrant vodka or gin sounds nice. I'll have enough to make the jams and a bottle or two of drink. would make nice christmas pressies too I think

Mixed berry jam is very good. Like redcurrants and raspberries, which I have made, and blackcurrant and loganberries, strawberries, any and all sorts.

Be careful as it quickly ferments as I found with 8 ltrs last year.

Blackcurrants make a wonderful cheesecake topping. Plus it's a very quick (and I now realise easy) thing to make, too.
Most of the recipes I've seen were over-complicated, but I made one up and it was fine

what a brill idea Haize! I know you can use raspberries so why not blackcurrants.
