Bubble and squeak

how do you do yours?

this year i'm going to try a b&s spanish omlette - cut up the veg and spuds into chunks and cook with 4 eggs. hope it works anyway!
Kathy

I just usually mash the cabbage and potatoes together with a little salt and pepper, never tried it with eggs, sounds tasty though, let me know how it turns out.

i have lots of cooked veg leftover but no potatoes ( Rolling Eyes ).   Is it possible to make B&S without them?
Kathy

You could maybe whiz veg up with flour and egg, should be binding enough to shape and fry.
Actually, I might do that for brunch, thanks CP, I don't fancy soup today, am in a fryup mood.   Very Happy

Thanks Kathy, why didn't I think of that?  I may add some grated smoked cheese as well.   Will give it a whirl and report back!

Lovely avatar btw  Very Happy

I chucked left over roast potatoes, sprouts and parsnips in the processor with a bit of veggie gravy, whizzed it up, made rissole shapes and then fried till golden brown. Even E scoffed them up.
Great way of using the leftovers and thanks to Aqui and CP for the collaboration inventing this new recipe!  Very Happy

I added some smoked cheddar, seasoning,  beaten egg and flour to make little patties then fried in olive oil.  Turned out very nice and all got eaten this evening.

See, the Potting Shed rose to the occasion again  Very Happy

t thought ours was lovely, but i thought it lacked something, not sure what.

normally i do what kathy did, but t isn't too keen on mash.

I think if you aren't keen on mash then bubble and squeak isn't going to go down too well.

We just use the potato masher on what ever we have left over, and dry fry, slowly a panful.  Nice as a veg, or even in a sandwich.  Branston pickle is a must with it too.
