Caramalized onion gravy

Someone asked me before how to do it, so here's a quick pictorial.

First, chop four large onions into thin slices.



melt half a cup of butter in a large pan.



Pick a handful each of thyme and rosemary and finely chop the leaves



Fry the onions for about 40 minutes until they go dark brown, then add the herbs and stir in. Stir in one and a half tablespoons of plain flour next and mix well in. Then add one and a half tablespoons of honey, and the same amount of balsamic vinegar. Stir again.

Add approximately a pint of water and continue to stir over a medium heat until the required consistency is achieved. Then season to taste.



This can be done long in advance and frozen for future occasions. Wink

Rosemary ok but your thyme looks a bit suspect Lloyd

The thyme hasn't done well this year, and I made do tonight. Dried herbs I'm sure would be fine if you don't have fresh. Taste is really nice and herby, sort of sweet and sour, with honey and vinegar in equal measure.
