Carob coated brownies (sin free!)

I meant to post this a while back but forgot! Anyway, the recipe is taken from "Cooking without" by Barbara Cousins. It is a vegetarian book, sugar, gluten, yeast, saturated fat and dairy free. Most of the recipes are vegan, and where there are eggs I just use egg replacer.

Grandaughter E loves these as she can't have sugar, wheat, eggs, dairy or chocolate/cocoa.

Brownies:

Gas mark 6 200/400.

125gr dates
125grms eating apple
180ml water
60 ml sunflower oil 2 large eggs or egg replacer
125grm rice flour
60gr carob flour
1/2 tsp vanilla extract
2 tsp baking powder

Finely dice the dates and apple then simmer in the water until soft and reduced to a thick puree. Add a little more water if the misture dries out before it is cooked.
Place the mixture in a food processor with the oil, eggs/egg replacer, flours, vanilla extract and baking powder.
Placed in a greased and lined baking tray approx 28 x 18 x 5 cm.
Bake in a preheated oven for 15 to 20mns or until well risen and firm to the touch.
allow to cool for 5 mns in the baking tray then turn out and remove the lining paper.

Carob topping:

60grm dried dates
30grms carob flour
125ml water
2 tblesp light tahini
1/2 tsp vanilla extract
toasted almonds to decorate

Finley dice the dates and simmer with the carob powder and water until smooth and thick. Remove from the heat. Add the tahini and vanilla extract and beat to combine. Allow to cool.

Cover the surface of the brownies with the frosting and sprinkle with the toasted almonds.

I've got the top 2 books from that amazon list Aqui, the brownie recipe is from the first book.

It reads like a standard cookery book with a good selection in each section. I made the muffins from this book and they were actually better than the "real thing" I'm suprised to say!
