cauliflower

We've got one in the box this week. Don't have it very often. I've put some in tonight's curry. Tomorrow we'll probably have homemade bean burgers, sweet potato wedges, broad beans and cauli. I usually just steam it, but is there something more interesting I can do with it?

I made Waitrose's cauliflower & almond pilau rice at the weekend, or was it Monday  Embarassed   and not only was it one of the easiest receipes I've ever made, but I think it is in the top 10 for taste too.  I cannot enthuse enough about it and will probably make another one this weekend.

I should've said, T hates cauliflower cheese (bad experience as a child) and I'm currently not eating dairy anyway.

That cauliflower & almond pilau rice sounds good MC, recipe please?  Smile

Cauliflower and brocoli, cut into small bits then fried with oil, tamari/soy sauce and balsamic vinegar till al dente (sp), quick and yummy.

Serves: 4
1tbsp vegetable oil
1 red onion, finely chopped
400g basmati rice
1 tbsp Veeraswamy Hot Madras Curry Paste (we used a different one that was in the cupboard)
1 Kallo Organic Vegetable Stock Cube
1 cauliflower, cut into small florets
50g Waitrose Wholesome Roasted Marcona Almonds (we used normal ones & cashews, yep, cos they were in the cupboard))
20g pack fresh coriander, roughly chopped (reserve few leaves to garnish)
4 tbsp natural yogurt, to serve


Heat oil in a large pan, cook onion for 2-3 minutes until softened. Add rice & curry paste, stir until the grains are coated.
Pour in 750ml boiling water, crumble in stock cube and add cauliflower florets.
Bring to boil, reduce heat then cover and simmer gently for 13-15 minutes until the rice is tender and liquid has been absorbed.
Stir in the almonds and coriander, season to taste.
Divide between 4 serving plates and garnish with a few fresh coriander leaves.
Serve with a dollop of yogurt and a side dish of poppadoms.

It's yummy MC! I use a different curry paste, boullion and the almonds and cashews I keep in the cupboard. I've been told I can make it again so that's a good sign! A friend left me tons of brocoli so I'm going to try it with that.  Smile

oh thats brilliant - I once passed on one of my favourite pasta dishes and they hated it, so ever since I've been a bit hesitant  Very Happy

Apparently you can also swap the cauliflower for butternut squash (cook it the same way I guess).

Another success with the brocoli, even E ate it (she's going through a "don't like it" stage!). I've just had another helping for supper.  Embarassed

LOL, you sound just like us.  I'm taking it for lunch to work tomorrow.

I always put the little florets of cauli in a stir fry!
