Date and Banana Chutney

This is some Date and Banana Chutney I made this week. It smelt lovely when it was cooking:

In real life it's not quite so gingery-looking, but the smell of banana still overcame the "chutney" smell . . .

2 lbs bananas (6 large, sliced)
2 lbs cooking apples, peeled, cored and chopped
1 lb dates, stoned and chopped
grated rind and juice of 2 large oranges
2 tsp mixed spice
2 tsp ground ginger
2tsp curry powder
2 tsp salt
1 1/2 pints inegar
1 lb sugar

Cooking time: about 1 1/2 hours

Place all the ingredients in a large pan. Stir over a low heat until the sugar is dissolved. Bring to the boil, reduce the heat, them simmer for about 1 hour, stirring occasionally, until the fruit is reduced to a pulp and the chutney is thick.

Spoon while still hot into prepared jars. Seal with airtight, vinegar-proof covers. Makes about 6 lb.

That sounds tasty - I've tried a banana chutney before and despite thinking that it would be awful I really enjoyed it.

Thanks BB, there's often surplus bananas that end up on the compost heap, they'll be pleased if I can make use of them. Very Happy
