Dilemma

I've promised the family pigeon for tea, but can't decide how to do it. I have the birds in all sort of states, I have a bag of breast meat, I have numerous plucked birds, and I have about a dozen smoked pigeon crowns.
I could do a pie, (I also have some venison I could do with it), Or roasted birds barded with home smoked bacon and serve with game chips and winter veg, i could breast the lot and serve flash fried in butter and garlic with a tossed salad and duchesse potato or potato gratin......

My creative juices aren't flowing yet, probably need another coffee.

Any ideas anyone?

Mash with added eggs and nutmeg, then piped into small balls and then baked in a hot oven in a greased dish until crisp and brown.

Very Happy Wish we could!!!

Seriously, I just had to think about it a while to focus. I'm often like that with cooking. Some days at work the idea gradually firms up in my mind so when I get home I have planned exactly how and what I intend to do.

I'll post pix shortly when I dish up.

Our one remaining resident young'un (the intrepid bushcrafter Shocked ) doesn't fancy wild pigeon so we get one and a half each, and he can warm a tin of beans or something.  Rolling Eyes  Laughing

I must admit that looks very nice! You say its hard to describe the flavour. I can remember my mum giving us rabbit and telling us it was chicken, totally different taste and I hated it!

Have you ever thought of becoming a chef?

It was delicious and there was a little bit of meat leftover which went in my lunchbox with salad today.

Unfortunately halfway through, I bit on a piece of leadshot.  I have toothache now....

Very quickly! Soaked in boiling water for 15mns, whizzed in the food processor, seasoned with spices cooked in ghee then put in a loaf tin and baked.  Smile

i like lentil soup with crunchy bread....

red lentils with a splash of lemon juice in it and a bit of parsley

very sustaining.....

I love eating dahl with my curries, I also used to make a great lentil bolognaise which was very satisfying Very Happy
