Dried tomatoes

All the tomatoes have been taken off the plants in the greenhouse (poor crop this year) and are in the warming drawer of the rayburn drying off ready to be stored in tasty, fruity olive oil.

So do you just chop them in half, plonk them on a tray then bung them in a very low oven for hours??
Then other than putting them in oil, what would you do with them???

Here is an old recipe for Candied Tomatoes from Farmhouse Fare:

CANDIED TOMATOES

4 lbs yellow tomatoes
1 lb loaf sugar (ok - granulated these days)
2 lemons
1 pint water

Pour boiling water over the tomatoes, then peel them. Boil the sugar in a pint of water. Remove any scum, slice the lemons and add them. Then put in the tomatoes and simmer slowly until they look clear. Take out with a slice and put on a sieve. Boil the syrup until quite thick, then put the tomatoes in again. Simmer slowly for about 1 hour, then take out on the sieve again. Repeat once more, then flatten the tomatoes with a wooden spoon and dry in a warm oven. When dry put in glass jars.
