Early Morning Forage.

Well this morning got out early to go on the hunt for dinner  Very Happy

Managed to bag 3lb of Sloes we spotted growing yesterday, and a BIG rabbit for dinner  Very Happy
Well chuffed then we hit on the farm tables fresh eggs, cauli, cabbage & tomatoes and apples.

Well we did "Bunny" proud I like to think!, for my first time propa hunting! thoughts where running through my head for recipes...

I came up with my own yet again  Laughing

"Salt Marsh Rabbit In Cider"


Heres a pic of the main ingredients:-



Bunny (not boasting much  Laughing 2lb 4oz cleaned...) in quarters
handful of streaky bacon
stick of celery
LARGE shallot sliced
1 apple chopped
1 leek sliced
1 large carrot chopped
1/4lb quartered mushrooms
1 1/2pt of dry cider
bay leaf
thyme
sage
1/2 garlic sliced
salt & pepper
1 Veg oxo cube (in mug of water)

Fry off the bacon,onions, rabbit season... bung in all other ingredients in a crock pot on high and leave about 1hr and 1/2, thicken with corn flower if needed  Very Happy




EASY simple and bloomin great!

*BTW I have used every part of our catch so nothing unless absolutly essential was wasted by binning Very Happy

We love rabbit. There's a fantastic Keith Floyd recipe of rabbit stewed in elderflower champagne (or cider) which gives very tasty and tender meat. Another goodu'n a mate from Sierra Leonne gave me is rabbit coated in peanut butter(with garlic, lemon juice and crushed chilli's then roasted until the coating is a hard crust. That's a nice one too. Apparently you can buy it from street vendors on every street corner in SL, where they cook it in fire boxes for passers-by.
