Elderflower fritters

Has any one any advice on the best batter to use ?

Elderflower fritters

4oz flour
1 egg
1/4pt tepid water
pinch salt

elder flowerheads (if you can find some this time of year, you are a very clever man!!)  anyone tried freezing them for winter use??

Make up the batter, hold flowerheads by their stalks and dip into thebatter until thoroughly coated.  Deep fry in very hot fat or oil until golden brown.  Drain on kitchen paper and trim excess stalk.  Serve hot sprinkled with sugar.

Guess you'd use the lightest thinnest oil possible because the flowers flavour is so delicate it would be a shame to sludge it up with grease.

A good tempura batter is what I have been told Lloyd.
I have not yet ried them but am assured they are lovely.
I do like things like that and make lots of crispy seaweed and other such lovelies
