Elderflower wineOkay, the flowers are out, so who's collecting and brewing?....We're gathering ours tomorrow.....2 pints of flowers per gallon by my reckoning.

We gathered elderflowers three weeks ago and the results are looking promising.
I need to pick some more for cordial before the season has passed.
Did anyone read the article in the Daily Mail last week about elderflower wine and cordial being the latest fashion? Apparently sales are up massively. Why don't people just go out pick, and make their own. Much cheaper

The elderflower seems to be coming along nicely, bubbling gently away in a corner of the snug.
Trouble is, it absolutely pongs, smells like a tomcat has paid a visit

Mine went like that but it turned out ok in the end, if I remember rightly, Mr Kathy finished it all!

did elderflower champagne once and it had me on the floor after a glass or two....can't remember much of the afternoon......

I made elderflower wine last year and cracked open a bottle when my friend came to visit a year later. Altho it was very clear and I was quite pleased being as it was my first ever wine, it was far too sweet. Probably nice as a tall drink with lemonade and ice but way too sickly on its own!

We have found the same chadspad, nice but too sweet and almost like a cordial.

Most of ours was diluted before bottling with Chardonnay to remove the sweetness. Now getting enjoyed every evening as it still retains the unique flavour. Soon be time for elderberry!!
