Fast(ish) wine making?Hohum, I know nothing at all about wine making, but the searches I've done in the last few minutes seem to imply that it needs to be aged for quite a while. Does anybody know how to make something that would be drinkable by Christmas?
Our main ingredient would be blackberries, though anything for a little fun would be nice.

The only way I've found to make a quick wine is by using a kit. I used CWE country classic, apple, also gooseberry. It takes about 6 weeks but I left mine for longer. I also didn't use any Campden tablets, stabiliser or fining gel in it as per instructions. Didn't like the thought of all the additives and the fining gel is not vegetarian. I also used double the amount of sugar as the chap in the home brew shop said it was a bit "watery". The other modification I made was to replace 1 ltre of the water with pure grapejuice for extra body. This was my first attempt at winemaking and worked rather well, its all drunk now!
I'm not sure if theres a quick ferment way just using berries but if you want to try a kit for the first time you can get the CWE kits online. Let me know if you need anymore info.

I say go with kits for a year. They are lots of brewing/wine making recipes that I wouldn't pee in. Worth talking to a Ali as she's thinking of having a brewing/wine making weekend and I'm sure that whilst it's illegal to sell the end product without the right paperwork there could well be a lot of free samples.
