At the end of the month I will be back on the chutney run!! Try these

Option 1. Taken from "Home Preserves of Fruit & Veg"

3 1bs gooseberries
1/2 lb onions
6 oz raisins
12 oz sugar
1/2 oz mxd spice
1/2 oz mustard seed
1/2 oz salt
1 pt vinegar

Method
Chop the onions and cook them in a little water until tender, then drain off water.
Top & tail gooseberries, place in pan with other ingredients,
Bring to boil, reduce heat, and simmer, stirring frequently, until thick.

Option 2. Taken from "The Complete Book of Preserving"

4 1bs gooseberries
1/2 lb onions
12 oz raisins
1 ½ lb sugar
2 tsp gnd ginger
1 tsp cayenne
1 tbsp salt
1 pt vinegar

I prefer the 2nd option with the sustard seeds !!

* For paler chutney use white malt vinegar.
