Hot Banana Chutney

This recipe is from a member of the allotment forum that I'm a member of....it sounds delish!!!!....Kathy you could do your sugar trick with this I'm sure!! Smile

This makes about 4.1/2lbs

12 banana
1 pint malt vinegar
6oz seedless raisins
6oz chopped stone dates
8oz granulated sugar
1 tblsp salt
2 rounded teaspoons ground cinnamon
1 rounded teaspoon turmeric
1 rounded teaspoon cayenne pepper/or 1 pepper finely chopped (seeds in or out depending how hot you want it.

Peel and slice bananas and place in pan with vinegar, bring to boil and simmer gently for about 5 mins keeping it stirred until liquid is absorbed and the mixture is thick.
Then add all the other ingredients and mix well. Bring to the boil and simmer for a furthr 15 mins.
While still hot, pot in warm jars and seal.

Made a batch of this but used white wine vinegar instead of malt, also added dried chillies from last year about 3 habaneros a couple of pinnochio's nose a few cayenne and some pretty in purple. Had some tonight with the runner bean curry...it was nice but needs to mature for a bit!! Smile
