Does anyone make lots of chutney, use large jars and decant into smaller ones later?
Would it compromise hygiene, length of storage etc?

probably
but then i would think that you will probably survive as well
i tend to just put it in big and small jars
why do you need to decant?
it will keep once it is opened

Because I've had enough the last few weeks of making chutney, faffing about sterilising 100's of jars etc etc.
Found a few large pickle size jars so thought I could use them initially, then decant into smaller jars (we give a lot away) as and when needed/or I can be bothered.

well you got me there
i never sterilize my jars other than standing them in hot water......then i just slap the lids on without any bits of waxed paper or anything however i don't them change jars..we just use a longer spoon to get it out
in all honesty i don't know the answer to your question, as you can tell i am just a bit ad hoc about it all
there are those more women't institue than me who could answer your question more sensibly
Kathy
I've never done it and am like Nanny, ad hoc about it all. I personally wouldn't worry about decanting, the vinegar and sugar will stop it going off, just get the lid back on quickly and I'm sure they'll be ok.

It should be fine CP. i never bother to sterilise brown sauce and tomato ketchup now and it will last certainly for over a year.
