Mango BiryaniThis I put in the slimming club but I thought other people would maybe like to try it as it seems very yummy!
1 red onion, chopped
1 mango, remove stone and dice
3 plum tomatoes, roughly chopped
1 courgette, finely chopped
Handful fresh coriander and handful fresh mint, finely chopped.
12oz basmati rice
2 pts stock made with Vecon
1 tbspn mild curry powder
Seasoning.
Prepare ingredients as above.
Place rice in pan with stock and curry powder, season, bring to boil, reduce heat and simmer for 10 mins.
Add onion, mango. tomatoes and courgette to rice and continue to cook until the rice and vegetables are tender and all liquid has evaporated. Remove from heat and stir in herbs, serve!
