Mango Chutney recipeMakes about 1 kg (2 1/2 lbs)
900g (2 lbs) mangoes, halved, peeled and stoned
2.5ml/ 1/2 tspn salt
225g/8 oz cooking apples, peeled, cored and chopped
300ml/ 1/2 pint/ 1 1/4 cups distilled malt vinegar
200g/7 oz/scant 1 cup demerara sugar
1 onion, chopped
1 garlic clove, crushed
10ml/2 tspn ground ginger
Using a sharp knife, slice the mango flesh into chunks and place in a large, non-metallic bowl. Sprinkle with salt and set aside whilst you deal with the apples.
Using a sharp knife, cut the apples into quarters, them remove and discard the cores and peel. Chop the flesh roughly.
Put the malt vinegar and sugar in a preserving pan and heat very gently, stirring occasionally, until the sugar has dissolved completely
Add the mangoes, apple, onion, garlic and ginger to the pan and slowly bring the mixture to the boil, stirring occasionally,.
Reduce the heat and simmer gently for 1 hour , stirring frequently towards the end of the cooking time, until the chutney is reduced to a thick consistency and no excess liquid remains.
Spoon the chutney into warmed, sterilized jars, cover and seal. Store in a cool, dark place and allow to mature for at least 2 weeks before eating. Use within 1 year of making.

Yummy. Scuse me for asking a silly question but I am new to the chutney lark!
Is the weight of the mangoes with the stone in - or just the flesh.
Does it need 4 + weeks to mature like others. And has it ever lasted long in your household enough to see how long it lasts
I am thinking presents here.........bear with me

Weight with the stone in Lottie. I had about 6 lb mangoes before removing the flesh, and trebled the quantity of everything, and it yielded about 7 lb chutney. It will need some time to mature - all chutney does - if you're giving it as presents and have only just made it, you can put a "best after" date on it!

Thanks BB - I was thinking more long term - will it last forever almost like jam does.
Instead of the last weeks of the year rushing to make goodies for the hampers, I wanted to try and make things earlier over the year. (And hide them from family who tend to have a taster then get a jars to take home)
So if I could make chutneys when I see things on special off as you have, I wondered if it would be fine for May birthdays and Christmas hampers - or is that a bit too long.
Thanks so very much for the recipe - I am definitely going to try it as soon as I can - but not paying £1 a mango from the village shoppe
Must dash - got some butter to make
