Marmalade anyone???

I have never made marmalade!!!! and the seville oranges are in. Now because I haven't been up to speed, Lottie suggested I freeze them (whole) and we have a marmalade making day a bit later on.

Anyone fancy having a go???

Any good recipes?

Do I need any special equipment??

I made some a couple of years ago. Not sure if I still have the recipes. I made one batch of orange marmalade and one of orange and ginger, but I forgot about the second one and it burnt. The first was lovely!

You need the same equipment for jam making and a muslin bag, but I think that's it.

I won't be joining in - too much for me to cope with right now!

I have just made marmalade everyday, for the last 2 weeks, 4 batches a day!

I use the 3 fruit marmalade in the John Seymour book.

It is dead easy.

Instead of cutting up the skins we mince it on the coarse mincer and it comes out fine.

Where can I get a mincer??? I've checked all the charity shops, it looks like I'm going to have to pay out big money for one!!!!!!!

I made seville marmalade last year, very yummy although not having a mincer at the time, it took hours and hours cutting the skins up Rolling Eyes

Would like a try with the John Seymour recipe this time.

I've got the John Seymour book so it should be in there I think, need to check with OH but I'm sure our kenwood has a mincer attachment

I'm sure the peel could be blitzed in a processor..?

From what I read last year, you can but apparantly the appearance isn't quite so nice.

You can use a processor, but it tends to get more pulverised.

The kenwood mincer manages fine, if you have one.

On the seymour recipe we do reduce the amount of water from 10 pints to 7.1/2 per batch too, then weigh at 3k, and add 3k of sugar, ready to jam. Perfect results every time.

Yes Libby, mincing is fine - and despite usind an old experimental recipe that didn't work the first time-it finally came up trumps when I boiled it again.

The recipe I usually use works well too - and is similar to Alisons but in smaller batches.

My 6lb is now 4lb as we have used some - made some great orange sauce for my duck the other day.

All systems ready to go.

So the intention is really to get kind of strips of peel?

(I think I have the technology to do that: I tried using my "blender" to make 4mm slices of apple the other day, but evidently did it wrong, as they were all about 1mm thick! It all happened very quickly though Laughing )

Well....I have to buy a new rake....my other one gave up the ghost a couple of days ago....not bad after about 20yrs of use. I might also buy my friend a roll of fleece. She's going to start growing her own veg for the first time this year but has 2 cats (and numerous ones in the neighbourhood) which I think will probably ruin the soil...so a cover-up is needed. I might even stretch it out to get a few more gravel boards to replace old knackered bits of wood called raised beds!!!!! Smile

I'm doing marmalade today, farm shop has them for sale at 35p per kilo which I thought was a good price. I'll be using the delia smith recipe for seville marmalade.

My plans were delayed somewhat by a tiling project in the kitchen. But today I finally got around to making that marmalade. The kitchen smells lovely now, all citrusy Very Happy There are 5 and a half jars in all, I used the Delia Smith Seville Orange recipe.

Didn't find it fiddly at all Laughing S and J did all the squeezing whilst I did the slicing of the peel. We don't like too much peel in our marmalade so I used about half of what was recommended, saved on a lot of peel slicing that way too Very Happy

I've only made marmalade once, as a pressie for a friend. No-one likes marmalade in our house, so no point in making it, which is just as well as the chopping of peel into minute strips took FOREVER. I'll stick to my jams and jellies : )

Hello, do you have to use seville oranges or can you use any variety, I have a few sevilles left and a glut of other oranges - can I still make it ?

I'm not sure of the answer to that one but I don't see why you can't. The other oranges will be sweeter though so you may end with a sweeter tasting marmalade rather than the sharp taste of seville marmalade. Perhaps you can get around that by adding in some lemons and or limes.
