marrow

what do i do with it?

I remember some slightly bland boiled marrow from my childhood. don't think i've ever eaten it any other way!

It's nice either steamed on it's own or the seeds taken out and stuffed with either a mince based filling or a rice or couscous one.

My Mum always used to stuff them with a rich mincemeat mixture, and then roast  it, which was always yummy.  

However recently I have been doing this ...

Baked Marrow, with Tomatoes and Coriander

Just the job for Courgettes too   ... we often eat it with brown rice and/or crusty french bread to mop up the juices ... deelish!!  

1 1/2 lb marrow - or overblown courgette!! - peeled and 1" cubed
8oz ripe toms (4 large) - skinned and roughly chopped
an onion or 3 shallots
3-4 cloves garlic - or to taste
1/2 tsp crushed coriander seeds
1 dsp fresh basil ( or 1 tsp dried)
1 tsp sugar (to bring out the tom taste)

S&P

Pre heat oven to gas 8, 325F or 170C
Melt oil in flameproof pan, fry onios and garlic, soften in gentle heat, then add tomatoes, cook further 5 mins.
Add marrow to the tom mix with the crushed coriander seed.

If using dried basil add now, if fresh add just before serving.

Place mix into casserole, bake for 1 hour, or till marrow cooked
Remove lid just before the end of cooking to reduce juice ... if necessary!

That does sound good - I've always struggled to get marrow to taste of anything much really.

I made a courgette and basil risotto last week which was very tasty though...basil seems to do something magic to courgettes (and of course, marrows...)
