Having met them on another forum and sharing a mutual friend in Norfolk,
the new couple the Morlans have threatened to visit this year! I've promised them Mayan Rabbit, it's quite a taste experience!
Mayan Rabbit
Well - rabbit and chocolate really! DARK Chocolate makes a good rich sauce and is dead easy
250g rabbit chunks (1 inch cubes to the imperially minded)
60 g good smoked bacon (chunky cooking bacon best)
1 large red onion, roughly chopped
1 garlic clove, thinly sliced
3 sticks celery, chopped
3 small red chillies - depends how hot you want it, just a slight after burn is nice - finely chopped
400 g tin chopped tomatoes
1 tbsp corn flour
1 tbsp oil
1 tbsp wine/cider vinegar
30-40 g dark chocolate, too much of your plain bouneville - too sweet!
1 pinch cinnamon
1 pinch paprika
Heat oil in heavy pan, toss rabbit in flour/spice, then brown in oil. Set aside.
Add bacon, onions, celery, garlic and chillies, sweat until soft. add vinegar, tomatoes and chocolate, bring to simmer and reintroduce rabbit. Add salt/pepper to taste, add water if looks too dry. Cover and simmer until rabbit tender.
Voila!
Serve with potatoes - mashed, baked, wedges... plus green or tomato salad.

mmmmm not sure about rabbit at all probably because as a child my mother tried to fob me off saying I was eating chciken when in fact it was rabbit. It was very strong!!!!!!!!!

I love rabbit, quite literally can't get enough of it! I'm waiting for some freebies to appear anytime now!
Also like doing them very slowly in cider, until all the meat comes off the bone. Strain it and make a wonderful gravy!

I love rabbit but to buy it here is very expensive compared to what it used to be so we don't have it as often as we'd like

Was VERY nice but I don't eat chocolate but have to admit this was very tasty!
I did over do the chocolate I think though using "Arriba Superieur" 81% Cocoa content (Lidl's 99p ) I recommend if using that stuff just use one piece not 4 like I did

Got one marinading in thyme, paprika, an all-seasoning mix, lemon and oil and salt and pepper. Will have that tonight with some pink firs (that I hav'nt checked on yet!!) garlic courgettes and mixed salad.
Hopefully will try Lob's recipe for tomorrow...minus the celery 'cis we hav'nt grown any of that!
