Sorry Lloyd, I should have said it can also mean you've put too much oil in it, add a bit more egg yolk if the beating doesn't work.  Smile

Thanks Kathy, going to beat the **** out of it now, and also add some mustard which apparently is an emulsifier. Failing that will squeeze the chooks in the morning............

It's just been pointed out to me that I should only use yolks, not whole eggs so not sure if it can now be salvaged.  Sad

I tried to salvage, following advice from many people, but it still didn't work, so is now just a salad cream. Maybe Lidl extra virgin isn't really the best tool for the job. May try rape seed oil next time, and older eggs.

If you could use it all in one go, perhaps you could beat it over hot water ?? (as you do when making hollandaise)  Confused
