Meatless Loaf (for Aqui)

This is a recipe from 'Linda McCartney's Home Cooking' - it's like a meatloaf but without the meat!

2 tablespoons sunflower oil
2 medium onions, chopped
9oz dried TVP
10 fl. oz hot water or vegetable stock
3oz breadcrumbs
1/2 tablespoon dried mixed herbs
2 cloves garlic, crushed, or 1 teaspoon garlic powder
1 egg, beaten
5 fl.oz sour cream (I left this out)
2 tablespoons soy sauce

In a small bowl, combine breadcrumbs, herbs, garlic and 10 fl. oz cold water. Stir in the beaten egg and set aside.

Heat the oil in a pan and saute the onions until lightly browned. Add the TVP and cook for a couple of minutes, stirring. Add the hot water or stock and simmer for 4 minutes.

Combine the TVP mixtures with the breadcrumb mixture. Add the sour cream and soy sauce. Stir well and season to taste.

Now the recipe says to shape the mixture into a mound on a baking tray to cook it, but I put it into a 2lb loaf tin and it worked just as well. It also freezes well uncooked. Bake for an hour at 180 degrees/gas mark 4.

Kathy, as far as I can tell the egg's only there to make it 'set' in the oven - it doesn't seem to add any flavour or anything.

I've made this quite often since I got the recipe book years ago and I've never put the sour cream in it....

I've got egg replacer but linseed gel works for setting too (Greenlady uses it on her very curly hair!).

I'm making it this evening, I've got a pack of tempeh which I'll use instead of TVP. Smile

It's soya mince Libby - you can get it frozen (most supermarkets do their own by I like the Realeat one best) or dried. The dried stuff is what I used for this - the frozen one makes it too sloppy.

Thanks for the quick reply! I shall give this a go as I love meat loaf or meatless loaf as is the case here!!!
