Medlar Jelly

Wash all your Medlars,



quarter and put into a pan, cover with water but not so much that they float!

boil until soft, this took me about one and half hours. Spoon/pour into a jelly bag stood over a container and leave overnight. The following morning DO NOT SQUEEZE.

Lift off and discard all the pulp.



Measure the liquid back into your pan and for every pint add 1lb sugar and 1 tablespoon lemon juice.



Boil until setting point is reached. Pour into sterilized jars and seal.

This is the best bit



Just look at that colour, and its so clear too.

Who would have thought manky looking fruit could create that!!!

Of course you can CP along with the dust, muck, soot, coal bits and cinders that get spread everywhere when you empty it  Laughing




To be honest, I love it dust and muck and everything, just sometimes need to cook in my bra Embarassed  cos it gets so hot! Laughing  Laughing
