Mushroom Goulash

My husband doesn't like this, so I haven't made it for years. But last evening he was having something meaty, so I thought I'd resurrect this recipe for me.

Unfortunately, I seem to have disposed of the book the recipe was in, so I had to make it up as I went along, from memory. It went a bit like this:

A little olive oil
An onion
Some garlic
Some mushrooms, quartered, sliced, whole - however, you like them really
A little bit of flour
I'm sure the original called for some peppers, but I don't like them so didn't put them in
A small tub of natural yoghurt
Lots of paprika

Saute the onions and crushed garlic in the oil until soft. Add the mushrooms and cook for a couple of minutes. Add the flour (I used about a teaspoon full, it's just to thicken it a bit), stir and cook for a further minute. Add the yoghurt and paprika (and salt if you like but I don't think it needs it) and heat through.

I found that the important thing here is NOT to let it boil, or the yoghurt sort of curdles and goes grainy ... Embarassed It still tastes OK, but doesn't look very appetising!

Serve with rice/pasta/baked potatoes/whatever you have to hand.
