nice wheat-free bread recipe?Have you got a recipe that makes a decent loaf? I like granary bread best, so something similar to that would be great.
It doesn't need to be gluten free. I think it's just wheat I have a problem with. I can eat spelt, but can't get it to work properly. It just seems to spread out rather than rise and is quite dry and heavy.

I always use spelt flour but it is trickier to use, just takes a bit of time to get used to it. Basic recipe:
2 teaspoons of dried yeast
4 cups (use proper measures) wholegrain spelt flour.
1 tsp salt
1 tblsp oil
1 3/4 cups water.
Mix together then knead, it is stickier than wheat flour but just keep flouring your hands. To start of with it might be easier for you to make rolls. Let it prove as normal but don't let it go too far or will just collapse. 20mns at 200 for rolls, 30/40mns at 200 for loaf depending on tin size. Once you get the hang of the basic recipe you can add grains and seeds to suit.

Kathy - I've been using your recipe, but can't get it right yet. If I made it by hand it's too dry and if I kneed it in the machine it's too wet.
Can you use that recipe for pizza too?
does spelt work in things like pastry and scones too?

I use the same recipe for pizza but put a few herbs in it and sometimes a bit of crushed garlic. Spelt is fine for pastry, we all prefer it to "normal" wheat pastry as it's lighter. Cakes and scones are fine too.
Spelt doesn't need much kneading and a light touch is sufficient. I made the mistake of hammering it like I used to do and just got a sticky mess. It does take practise, try kneading a small bit at a time and making rolls. Keep shouting if you need more help (pardon the pun!).

thanks again! Maybe the bread machine is too violent for it. I'll give it a gentle go by hand. I Knead quite gently anyway as I'm not very practised at it yet!

thanks Kathy. that seems to have done the trick. eating my first ever spelt pizza as i type. made totally by hand, hardly kneaded it. it's risen loads. if anything, it's risen a bit too much for pizza!
