Pickled leeks?

Has anyone ever pickled leeks?
I'm making room on the lottie for next seasons spuds and I want to dig on the moons last quarter this month (stop laughing), so my nice leeks have to come out soon, and I can only eat so many! Question

Never heard of pickling them....why can't you keep them through the winter and sort the ground out in early spring?
