Pickled OnionsI made some a few years ago and basically just peeled them, stuffed them in jars and poured the pickling vinegar over, but I wasn't impressed as they where a bit soft, so I am following my mums favourite cookery book 'Good Housekeeping' and actually brining the onions first....
this was last night as they went in the brine
the plate to make sure they remain submerged!
this morning, the smell was divine (I know onions in the morning)
but they are a different colour!!! They will stay in the brine until tomorrow morning, then I'll wash and dry them then pop them in jars and pour over the spiced vinegar!

I didn't wait cos re-read the recipe and it said overnight
think I need to make some more as these won't last long

Make sure you leave them for at least a year Libby, says she, who found a jar from THREE years ago - they were great

Libby I think you are supposed to leave them for at least 3 months or Christmas at the earliest

Have any of you a recipe for spiced vinegar that you prepare a year in advance?
The resulting vinegar is very black, from all the spices, and I usually try to get mine a bit sweet, but would love to find a better recipe! The onions are superb though!!

Don't you just shove spices in the vinegar and leave?? The recipies I've seen, you add spices and then warm up the vinegar!

My aunt's husband used to pre-prepare his brew! All the spices and sugar were added well in advance and allowed to 'stew' for the duration!
The onions would come out almost black but oh so sumptuous! mmm

Now you've said that I remember someone in my family doing something similar, probably my nana although I don't recall her doing pickled onions I only ever remember her making Lemon Curd!!!!!!!

I just peel and chuck mine in cyder vinegar with a wee bit of honey!
