Plum, Banana, Raisin and Ginger Cobbler

I've a glut of plums so made this. Taken from "Cooking Without" by Barbara Cousins. Wonderful book for those with intolerances and allergies including yeast. I made a couple of changes, E is allergic to eggs and we use oatmilk and rice milk in the house as opposed to soya (easier to digest).

Plum, Banana, Raisin and Ginger Cobbler

565g Plums (skinned, stoned and chopped)
2 large firm bananas (chopped into 1" pieces)
30g raisins
1heaped tsp fresh ginger (grated)
4 Tbs water

Scone Topping:

125g rice flour
125g + 2 tbs potato flour
2 tsp baking powder
30gr marg
1 egg made up to 180ml with soya milk (I used egg replacer and oat milk)

I used a little agave syrup in the topping to sweeten it a bit.

1.Combine all the fruit and place in a deep dish then pour the water over.
2.Put the flours and baking powder into a food processor along with the margarine and process.
3.Add the egg and milk mixture and process till you have a soft dough.
4.Place even sized spoonfuls of the topping onto the fruit, don't spread it out but leave the topping in mounds.
5.Bake in a preheated oven 240/475/gas9 for 10/12 mns until the topping is firm and just starting to brown.


We ate it on it's own but it can be served with Vanilla custard.

Vanilla Custard

600 mls soya/oat/rice milk
1/2 tsp stevia (or sweetener of your choice)
4 tblsp unbleached cornflour (cornstarch)
1 tsp vanilla extract

Place all the ingredients in a pan and beat to blend in the cornflour. Bring to the boil stirring constantly and simmer for 2 mns.

Somehow don't think my one plum will spread far enough to make this.....although it sounds delish!!

I've not made that one yet. I love the apple sponge on the page opposite. In fact I use the recipe for my basic sponge cakes.
