Preserving and Curing.

The Bramley tree in our Malthouse garden is laden with fruit.I would like to try and bottle some this year,instead of freezing.Has anyone else bottled apples? I have a mountain of kilner/le parfait jars, so just need the method.
Years ago(pre having a freezer) I used to bottle fruit using the oven , the book I used for info was  called Food For Keeps, but I,m now confused between all the methods.

Not sure about this one Cookie, I'll check my books later. There's a lot of confusing info about bottling, especially on the american sites.

Hmmm - the non-metallic pan might be problematical in this house!

I think the thing is to not use Aluminium.  I have enamalled pans for water bath canning, and a pressure canner otherwise.

i use ali pans for water bath method with no ill effects on product or me!

the method i use is a little unorthadox though.

sterilise jars in the sink with a mild clorine based bleach,then rinse clean then fill to within 1 inch of the rim with piping hot stewed apple (add a little lemonjuice during cooking to stop browning) then i place in a hot water bath and boil for 45 minutes.

this method has served me well and very very rarely do i lose a jar to mould,i have cherry toms that are 8 yars old in the larder and are still fine to use,stewd apple and blackberry too is about 5 years old.
