there's a quince tree/bush at the bottom of my garden. When are they ripe and what can I do with them?

According to my book...

It do say they are ready for picking in october & they can not be eaten raw. They are most frequently used in jellies...

In another book I have recipe for Jam & Jelly & in another one wine Wink

And in the magazine I bought yesterday theres something called "quince cheese" - There is no dairy product in the recipe...
