Roast Squash and Ginger Soup

Roast some squash (keep skins on) in the oven with olive oil and ginger.

Soften some onions and garlic in a saucepan then tip in the roasted squash. Whizz up, then season with boullion, salt and pepper.

Oooh, I just happen to have a big butternut squash in the fridge that was destined for soup - I might just try this at the weekend.  Thanks Kathy  Very Happy
