rye, buckwheat, gram floursI've treated myself to a load of different types of flour (don't I know how to live!) But what do I do with them? (I also have spelt, rice, white and wm self raising, white and wm bread, potato, cornflour, gluten free bread flour - I think I'm trying to start the nathional collection of flours!)
Can you make pastry with any of them?
Or cookies? (I've made the honey and cinnamon spelt cookies off the packet - lovely!)
I don't want to make rye bread - takes too long and too much organisation!
Been looking at the dovesfarm site, but it doesn't have much for the 3 in my title.
And Kathy - if you're reading this - can you make quiche with rice milk instead of cows milk? (I have 10 eggs - not that I plan to use them all in a quiche!)

I have all these in my cupboard and more Aqui!
If I make quiche I don't put any milk in, sometimes water sometimes just all eggs, though I would imagine rice milk would work if water does!
Gluten free pastry is a b*****r to work with but lovely and light. I don't roll it out as it just breaks up, just press it into the tin.
You can make simple cookies that are like shortbread with rice flour, cornflour and marg with a bit of whatever sweetener you use.
We use buckwheat for baking, it's very sweet compared to "normal" flours. Rye flour we only use for bread but I'll see if there's any recipes in my books. Gram flour I've only used for falafels and gluten free bread, again I'll look for recipes.

Pity!
"LONG" is good for bread and certainly for our "guts"!
I use buckwheat flour for blinis (galettes), pasta and some breads;
rye flour for many, many breads (inc. uncomplicated ones too!) and gram for Indian bhajis, pakoras and Italian farinata.
Rice flour is great for desserts (firni), rice dosas ...

Make some buckwheat pancakes,(blinis) top with smoked salmon and sour cream or caviar and sour cream, divine. With the gram flour shred som onions add gram flour and curry powder and deep fry some onion bahjis.
