Seville orange marmeladeI didn't make any last year as there was some left from the year before!
I have the urge to make some more now but conscious of the amount of sugar that goes in. Is there anything that could replace sugar but the marmelade still tastes yummy?

Agave syrup doesn't taste strong, I've been using it for some things. I use less liquid in any recipe substitutions, if that makes sense. I've never made marmalade so not sure how it would work for that.

I think theres a sugar free jam recipe somwhere so wonder if the same would work for marmalade, the only thing is, its an expensive mistake, so not sure really!?

Is it not possible just to reduce the amount of sugar, or does that affect the setting or something (I've never made it either....)? My sister gave us some 5 fruit marmalade for Christmas and it's nice but incredibly sweet...

I imagine the traditionally high sugar content is for the preservative benefit, so just a guess but maybe a higher fruit content is needed to raise fructose levels to compensate for low sucrose levels?
