Smoking foodsI'm planning to start smoking foods. I was going to buy a smoker, but am deterred by the price. I just recently met Kipperman (Mike Smylie)

at the Frampton On Severn show, and am now planning to build a smoke shed like his using free pallet timber. Antone else tried thsi before?
I have questions such as how to source free clean woodchips or shavings?...If I use my chainsaw they will be tainted with oil and spoil the flavour.

i tried to source wood chips because i was intending to do buckskins and they needed to be smoked
i managed to find a local woodworker who did all his stuff on a pole lathe and had some fantastic wood chips that were untainted
i would imaging that you would have to find something like that and that you would want apple or oak or something similar
now that we are moving i will have to start again of course...............

Maybe you could ask on RC forum - I remember ions ago the talk of smoking or on the sausagemaker one?

Well, I know how to make a pole lathe, from my previous incarnation. The problem is persuading CP that we still have room for things like smoke sheds, pole lathes, etc, when house and garden and garage are already full...........

If you want to travel as far as Trowbridge, they used to give out huge blocks of shavings (I'm talking my shoulder height) for about £2 at the Airsprung bed factory. You'll have to hurry though because they burn it for fuel in the winter to keep them warm
Might be worth ringing them to see if they still do it.

you are both gettin in serious need of that smallholding aren't you?
what about the shavings that horses are bedded down on?
they have to be completely non toxic but i don't know what they consist of

You can't use them for food smoking as they are all pine.

i make my own shavings by de barking some seasoned oak and simply planeing it,an electric planer would make it easy work,or failing thatjust split like realy fine kindling/splinters.

I'm getting a Bradley Smoker smoke generator on Friday, and plan to learn how to smoke cheese, meats, nuts, seeds, garlic bulbs, oils, meats etc on it.
I'm going to bolt it onto a defunct chest freezer stood upright in the garage. If we can make this produce nice food, we can then start to sell it.
There are so many unknowns though, that I'm hoping someone else has done this before, and can advise me. My problems are as follows:
If I use a working freezer, and use it working, is that better for cold smoking?
Does it emit loads of smoke for the neighbours to complain about?
Using the above system, will it also do hot smoking?
Having smoked cheese, can I freeze it?
Realistically, I want to turn out long shelf life foods to avoid legislative restriction, so stuff like cheese nuts and jerky. That way I can forget about such issues as sell by dates. More perishable stuff can come later.
Anyone been there and done that?

couldn't you vac pac it, to save having to freeze it?

Just looking at vac packers now, but expensive initial outlay for the kit.

Lloyd now the proud owner of a smoker, it doesn't seem to emit much smoke and the fridge is full of various cheeses and meats he experimented with yesterday.
I did a big Sunday roast yesterday evening with apple smoked pork tenderloin. It was yummy.

First samples wrapped andready to go to colleagues tomorrow.......Alder smoked Brie, Alder smoked cheddar and hiskory smoked cheddar. Garlic bulbs and onions in oak smoke.

Quite surprising actually!...So many people are coming forward and tasting then placing orders!!...Most unexpected. Three sample packs given away today at work, two via internet to post tonight, and at the farm shop the owner has asked me to bring in some samples for him to taste!!!!! ......Hit the ground running I suppose. Just bought a vacuum packer on Ebay...delivery Thursday, (my day off)
Working now on a Christmas product list, which will contain smoked duck breasts and wild venison steaks.
