storing an open eggI tried googling, but it's not giving me the answer to my question...
I opened an egg yesterday to egg-brush some pastry. I have most of the egg left, don't want to throw it away, won't eat it until at least Wednesday. Will it keep this long? Or can I freeze it?
Haven't got time to make anything, so I was going to have scrambled eggs, but we're eating leftovers for the next few days!

You can freeze eggs - I do - just need to beat them a bit to break the yolk.
You can store them in an air tight little pot in the fridge.
If you put a little bit of water on the top it will stop a skin forming, but if you do get a skin, then it won't 'hurt' you, just beat it in.
