Sugar free vegan Christmas Cake

Ingredients

2 1/4lb raisins
1lb currants
10oz sultanas
14oz margarine
grated rind 1 lemon
grated rind 1 orange
1 tablespoon orange juice
1lb wholemeal flour
1 teaspoon each of nutmeg, allspice, cinnamon and ginger
soya milk

Combine all of the ingredients apart form the milk and mix thoroughly. Add enough milk to make the mixture into a soft cake mix.

Press into a greased cake tin and bake in a pre heated 180 degree oven for 30 minutes (until a knife put into the middle comes out clean).
