sweet chilli jellyNow off to finish making the chilli jelly (EJ's recipe on A4A) but instead of using just apples I've done a mixture of apples and pears....fingers xed it turns out ok

According to EJ you could eat it with anything...sandwiches...as a dipping sauce....an accompaniment to curries etc...or added to different dishes.

I made it, with apples, very nice and if you heat it up so that it goes runny it's nice to dip spring rolls into

It tastes yum! tho' a tad hot must be due to the fact I put 25 chillies in it and I only made one jar!!!! Iused apples, pears, 1 lemon and 2 limes. It is a bit cloudy but I think I need a new jelly bag bag. EJ puts a chilli in each jar to pretty it up but I put some cloves of garlic in when it was half set.

we love it with cheese and biscuits, and if its that hot you can chuck a teaspoon into the wok when doing a stir fry and it is delisious.
I make mine with tomato and chilli, lemon juice and it tends to set, just,

WEll being new on here and spotting this thread i was immedietly inteested.
as you are aware by now i am a chef/ forager. Well i do quite a number of farmers markets and produce a great many products using wild food etc.
one of my greatest sellers is my chilli jam. I sell so much i had to stop production simply because i could not keep up with the demand and it was so labour intensive. It is made using red, green chillies, red peppers, garlic,ginger,sugar,soy sauce,fish sauce etc. Takes about three to four hours to make.
Anyone want the recipe it will be in my wild food cook book out sometime next year i hope.

I make and sell huge quantities of sweet chilli jam each year. Could not keep up with supply and not cost effective but absolutely fantastic.
A recipe for those wanting to try.
Gourmet fungi chilli Jam
1kg red & green chillis
10 red peppers
8 red onions
1 bulb garlic
1 kg sugar
lots water
soya sauce
fish sauce
lemons
seasoning
Method
1. blitz top four ingredients
2. Add the rest and cook
3. keep cooking for 2-3 hours till thickened
4. jar up
This goes with almost anything from, hot sausages, burgers, toasties, bbq's packet of doritos corn chips. Great with guacamole and salsa. By the spoon full in gob..........
