TrafflesFinally I got round to writing a proper recipe for these. I got the idea from a "healthy" sweet called "Bounce," I got a free sample from the shop and rather liked it!

At £16 for a pack of 12 I was determined to make my own version!
TRAFFLES
You can fiddle around with this recipe, put different nuts in. If you don't like crunchy bits whizz it up more. Use Agave syrup instead of maple, or grape juice instead of apple, anything that takes your fancy really.
This recipe made about 80 balls so would obviously need to be scaled down for smaller amounts!
100gr puffed rice (I use Kallo as it has no added sugar, Tesco sell it)
120gr walnuts (very finely chopped)
150gr desicated coconut
4 tblsp brown rice flour
2 cups crunchy peanut butter (I use Suma, again because it has no added sugar)
2 Tbsp carob powder
100gr dried fruit of your choice (I like sultanas)
200ml apple juice concentrate
2 tblsp maple syrup
Apple juice to make "truffle" consistency.
Extra coconut and finely chopped walnuts for rolling
Mix the whole lot together, process till you have it as "uncrunchy" as you like. Roll into little balls, a bit less than a golf ball size and roll some in coconut and some in walnuts.

where do you get juice concentrate from?
i'll have to use cashew nut butter (oh i miss peanuts!)

You can just use apple or grape juice Aqui, I only used the concentrate because they've started selling it at the shop and thought it would work out cheaper as you need less. Any of the nut butters will work fine.
