wheat free lunch ideas

I'm trying to cut down on the amount of wheat, specifically bread, that I eat. Dinners and snacks are fine, but I'm struggling with lunch. So far I've had:

potato and veg omlette and salad
leftovers (rice, sweet potato and things)

um.. that's about it!

a few other ideas I've had:
jacket potato/sweet potato
bean salad

I can't eat soup in the summer, need something more substantial than just salad. Don't want to just replace it with gluten free bread (although I will try making spelt bread/rolls again). I tend to eat things like rice cakes and ryvita for snacks.

need ideas that are easy, quick, vegetarian, resonably healthy and fairly filling!

Falafel and couscous (is couscous wheat free...?)
A bigger salad  Wink
Pizza with potato or polenta base
Stir fry
Stuffed peppers/tomatoes/courgettes/mushrooms

um

I'll add any more if I think of them...

when I do salad in the summer I always add a carb with it, so a pasta salad, (gluten free), rice salad, bean salad, potatoes and that can make the salad more filling.

sadly couscous is wheat. Other grains take too long to cook, but i could cook extra when we have them for dinner.

potato pizza sounds good. we're probably having shepherdess pie for dinner, so i'll do more mash for lunch. i'll try the others too.

trouble is i've spent all my life having sandwiches for lunch, i'm just finding it hard to think of anything else!

got to start planning lunches as well as dinners

Polenta is quick and you can buy blocks ready made, pretty cheap too. Most stores sell tofu now as well as well as gluten free pasta. If you have rice for dinner make extra then you can have a quick stir fry, I quite often have that. One thing that does fill me up is a fruit smoothie followed with some salad, I don't seem to need anything bulkier with that combination.

thanks for the ideas. I managed to go the whole of the rest of the week without eating any bread!

tues - falafel and salad
wed - jacket potato and salad
thur - leftover lentil shepherds pie
fri - leftover rissotto
sat - omlette and salad
sun - buckwheat wraps were a disaster so i had beans and salad

i've had much bigger lunches than normal, so haven't snacked much in the afternoon (usually just had some fruit, rather than loads of stuff) and have still felt full at dinner time, so not had much dinner (hence all the leftovers)! my blood sugar has been much more stable too.

then last night we had pizza for dinner and since then I've felt sick, bloated and now got bad pains/cramps in my intestines. i'm going to try going completely wheat free for a few weeks, but first i need to find a wheat free, sugar free, nut free cereal.

not sure what i'm having for lunch today!

Good on you Aqui - I'd be interested to know how going completely wheat free goes...
