This was the menu for a restaurant night at Greenlady's new cafe which we did last night. She had many requests to do one and it's a nice wee earner.
It was so successful that we've decided to have it for our own Christmas dinner.  Laughing

Vegetarian Christmas 2008

Butternut Squash and Thyme Soup with Spelt Herb Roll
Or
Roast Beetroot and Clementine Salad



Chestnut and Red Wine Pate en Croute
Or
Rich Walnut, Cashew and Sage Roast with Red Onion Gravy


Served with Parsnip and Potato Rosti Cakes, Festive Red Cabbage and Herb Stuffing



Lemon and Ginger Cheesecake with Hot Ginger sauce
Or
Pan Fried Seasonal Fruit in a Hot Cinnamon and Rum Sauce


We will do boiled and roast potatoes though and have Traffles, christmas cake, and mince pies of course.  Smile

I adore Beetroot and its good for me as its so high in fibre so would love this recipe. In fact recipies for all the above would be appreciated, if your allowed  Very Happy  Very Happy  Very Happy

I should add that most of the customers were vegan so we stuck with a vegan menu for simplicity. The cheesecake was made with silken tofu on a spelt biscuit base.

Most people had some of each! We also served some Booja Booja maple and pecan ice cream. Laughing
