I made elderflower wine last year and cracked open a bottle when my friend came to visit a year later. Altho it was very clear and I was quite pleased being as it was my first ever wine, it was far too sweet. Probably nice as a tall drink with lemonade and ice but way too sickly on its own!

We have found the same chadspad, nice but too sweet and almost like a cordial.

Most of ours was diluted before bottling with Chardonnay to remove the sweetness. Now getting enjoyed every evening as it still retains the unique flavour. Soon be time for elderberry!!
