I got this recipe from the Creative Living forum, it really is tasting very promising, hope it lasts longer than the banana!!

2 quarts elderberries
1 gallon water
3 1/4 lb sugar
4 oz raisins or sultanas
1 tbsp dried yeast + 1 tbsp sugar, warm water

Strip the berries from the stalks and pour the water over; bring to the boil and simmer 15 minuts or so. Strain, and discard the pulp. Add the sugar and raisins and stir to dissolve the sugar. Leave to cool to blood heat. In the meantime, start the yeast. When the yeast is frothy and the liquid cooled, mix together, cover and leave 24 hours - it should fizz audibly. Next day, transfer to a demi-john (i've left the sultanas in mine), fit an airlock and ferment out. Bottle and keep for one year before drinking.

Elderberry is a good one, i did 2 bottles mulled at christmas when the family came in and it was lovely, all said it was better than normal red , whatever that meant.
