Been a while since i posted anything here due to lack of interest from participants. Any way am at home today with some mystery bug and feeling like pants. When i should be out there earning a living picking wild food for my wild food box scheme.
Back to woodies.........i have been experimenting with several cures for pigeon breasts and think i have come up with a winner.
Any one else tried curing breasts.........?  _________________ Be a funky person and eat wild food |

I've never tried pidgeon. We have quite a few round here, OH is trying to get permission to shoot on some of the land. I don't think I'd try it, but he certainly would. Any recipies would be appreciated. _________________ The Card Bee

Why would you want to?......Fresh pigeon retains all the fresh flavours.

The reason i want to is to create another product for market. I have succseeded as well. By experimenting with various dry cure mixes i have come up with an ideal mix suitable for wood pigeon.
Useful for me when out running forays as i can carry a suitable amount of cured pigeon which when cut into strips is a great added flavour with wild fungi, marsh samphire and wild green dishes for depth and added protein. Weighs almost nothing as well.
Will be adding it to my wild food boxes also. _________________ Be a funky person and eat wild food |
