sugar free and I think low in calories...

75g wholemeal flour
50g plain flour
1tsp baking powder
1/4tsp bicarb
pinch salt
30ml clear honey
1 med-large courgette, grated
1tsp ground cinnamon
1inch piece root ginger peeled and grated
1 med egg, lightly beaten
100ml natural yoghurt
1tbsp oats

Preheat oven to 180C.
Makes 6.

place first 4 ingredients in bowl
stir in honey, add courgettes, cinnamon and ginger, fold through
add egg and yoghurt, fold, don't over mix.
put in oiled muffin tins or papers
dust tops with cinnamon and oats
Bake for 18 mins

(I've found with sugar-free baking it's best to whisk the eggs to add more air in and gently fold in)

Variations:

Add chopped or ground nuts or seeds
Use carrot and raisin, banana or berries instead of courgettes

Sounds like a good one, I could use egg replacer and some gluten free flour for E.  Very Happy

we love carrot cake so this could be a good alternative? I'll have to work out how many syns they have.

did any of you try this? i did, although used apple instead of courgette and even though i baked them in the end for about 3 times what it said in recipe they are really soggy.

i really fancied a muffin Sad
